Fancy White Cheese Toasts (a fun snack or app!)

We have a new obsession … cheese toasts! It all started when I discovered both an awesome bread baker and cheese maker at our farmers’ market. For months now, as soon as we get home we chow down on the pictured Orange + Honey toasts for breakfast using the fresh ricotta and also sliced mint leaves. This combo was inspired by something I saw in a magazine (sorry, can’t remember which one), and my older daughter, in particular, cannot get enough of this stuff!

Then we had friends over one night, and I decided to make some of these toasts and add them to a board with some other cheeses, crackers, and fruit. It was a hit! So I had the idea to make more “fancy” white cheese toasts! I tried a few more combos when I was hosting a “girls night in” at my house with some good friends, and then I made even more options for my family for a snack. They are all so yummy and hearty—this could honestly be your whole lunch or dinner for something different. We love a snacky meal every now and then!

Beet + Goat Cheese Toast

  • Whole-wheat loaf
  • Goat Cheese
  • Roasted Beets
  • Orange Slices
  • Honey Drizzle
  • Microgreens

Radish + Feta Cheese Toast

  • Whole-wheat loaf
  • Cream Cheese
  • Feta Crumbles
  • Thinly sliced radishes
  • Sliced chives or green onions
  • Olive oil drizzle
  • Salt & pepper

Orange + Honey Ricotta Cheese Toast

  • Whole-wheat loaf
  • Fresh ricotta cheese
  • Orange slices
  • Sliced mint leaves
  • Honey drizzle

Tomato + Pesto Cream Cheese Toast

  • Whole-wheat loaf
  • Cream cheese
  • Sliced cherry or grape tomatoes
  • Pesto (homemade recommended)
  • Balsamic Vinegar drizzle

These toasts are something we’ll be making again and again for all different occasions! Hope you enjoy them as much as we do.

Beet + Goat Cheese Toasts

A tasty new way to make fancy cheese toast with beets and goat cheese.

Ingredients

  • 8 slices whole-wheat loaf
  • goat cheese
  • roasted beetssee notes on how to roast beets
  • orange slices
  • honey drizzle
  • microgreens

Instructions

  1. Slice the bread thin, and, if desired, toast in a toaster or a skillet with a little butter or olive oil (I usually don’t toast ours first, but it is tasty!). Spread with a thin layer of the white cheese, top with other toppings, and serve.


Recipe Notes

How to roast beets: I roast mine loosely wrapped in foil at 400 degrees F until they can be pierced with a fork, about 45 to 60 min.
